I&#039;m making these paleo-friendly these days, i.e. no grains or sugars. I usually make these as pancakes, but they can be waffles, too. Just cook them longer than you think you need to; it takes them a while to get crisp.

2 eggs
1 14oz. can of coconut milk
1 cup shredded coconut, or coconut flour (grind it way down)
1/3 cup almond flour (kinda optional; if you don&#039;t mind grains, use rice flour)
half tsp baking powder
shot of vanilla extract
4 drops coconut extract
and if you really want to make it yum, add 2 TB melted butter.
